I’ve been threatening to make these healthy cookies with garbanzo beans for a while when I first saw them on Spabettie. Kristina got her inspiration from Christen (Purple Bird Blog) who makes a number of AMAZING hummus delights. (Between their VERY smart glasses and VERY smart names – I knew this would be good.) Little by little I found the ingredients on accident, so I was running out of excuses to not make them. When I found myself out of my regular AM staples this morning, I busted out the food processor – although it took me a while to find – and committed to having these garbanzo-bean-based healthy cookies for breakfast.
Kristina’s version uses six ingredients:
- Enjoy Life Gluten/Dairy Free Mini Chocolate Chips (1/2 cup)
- Bob’s Red Mill Sweet Rice Flour (2 TBSP)
- Adam’s Natural Peanut Butter (1/2 cup)
- Sweet Leaf Vanilla Stevia (I’ve been told you can use vanilla and maple syrup too) (10-15 drops)
- Can of organic garbanzo beans (not sure how much – I’m usually well stocked)
- Water (I had that handy) (2 TBSP)
I added nuts too, cuz that’s how I roll. And I did NOT peel the little suckers (sorry – that’s NOT how I roll). I don’t have anything to compare it to, but I don’t think leaving the skins on them was a problem at all. <Side note: you MUST see the commentary on peeling the beans on Purple Bird Blog – hysterical!>
I’m particularly fond of this assembler type of recipe for these healthy cookies because no chemistry is required. And yes, I successfully used my food processor without hurting myself ;)

Well….. I’ve only made one….. Cuz I had to make the mango quinoa salad too! I don’t want to over do things. But I’m stocked up and will be making them quickly upon my return from #LOHASforum and #FHBC11 – WOOT! And my mind is swirling…. I’m thinking the possibilities are endless!

Ooooo…I bet they are GREAT with coffee. I have to admit, I made the dessert hummus and wasn’t impressed, although my stepdaughter loved it. I think I’d much prefer these cookies!! Can’t wait to try…
